Coming up with new ideas about creative lunch box recipes can be tiring, and that is why we have come up with a short list of the best adult lunch box recipes that are currently the most popular among individuals all over the world.
The first meal on our list is a noodle salad. It is a Vietnamese recipe and it is easy to make, yet very nutritive and delicious. There are a few ingredients that you must have in order to make this salad – you will need 125 grams of rice noodles, half cucumber, chicken that will be shredded into pieces, 1 or 2 carrots, 2 sprigs of freshly chopped mint, one small cup of beansprouts and 50 grams of peanuts.
For the dressing, you will need half lime, one tablespoon of sugar (brown is our preference), rice vinegar, fish sauce and 1 red chili. The first thing you need to do is prepare the noodles. Then, slice the cucumber and cut it into pieces. Add the carrot, mint, chicken and the beansprouts cup. The dressing is very easy to make. All you have to do is pour all of the abovementioned ingredients and there you go- just pour them over your already prepared salad.
The second meal on our list is a chicken tortilla. You will need a chicken breast, 1 carrot and 1 cucumber, 100 milliliters of hoisin sauce and 2 or 3 tablespoons of mayonnaise, tortilla wraps and chopped lettuce. First of all, put the chicken breast into the oven and prepare it whichever way you prefer. Start grating the cucumber and carrot and set them aside while you mix the mayo and hoisin into a different plate.
Divide the chicken and add the lettuce, carrot and cucumber, alongside the mixture of the mayo and hoisin. Take the tortillas and start rolling the mixture into the tortillas. These types of chicken wraps are fresh and ready to eat for about 6 hours after preparing them, but make sure you place them into the fridge during that time.
Steak salad is the last lunch box meal on our list. You will need one steak, half head of fresh Chinese leaves, 3 to 4 onions, 1 sliced carrot, 6 sliced radishes and 2 tablespoons of coriander. For the dressing, you will need 4 to 5 tablespoons of chili sauce, fresh lime juice and 1 tablespoon of soy sauce. You will need mint leaves and peanuts if you want to do a final garnish touch to your salad.
First, prepare the steak and cook it for about 3 to 6 minutes on both sides. After that, put it in a plate and while the steak is cooling, put the ingredients for the salad in a separate bowl and start whisking them together. Slice the steak and place it into the bowl. The dressing is very easy to do – all you have to do is mix up the abovementioned ingredients and place them on top. After you finish with the dressing, add a couple of sliced fresh mint leaves and 10-15 non-salty peanuts as garnish for the salad.
