Fast Lunch Box Ideas

You need some fast lunch ideas? We managed to create a short list for everyone who wants to do a little magic in the kitchen and try something different this time. If you are sick of the same ham and cheese sandwich you eat every day (with some lettuce in it as the only true delicacy in the sandwich!), you should try some of our recipes.

Meatball sandwiches are first on the menu. These are the ingredients you need:

  • 500 grams of lean beef
  • 1 carrot and 1 zucchini
  • 1 tbsp of fresh tomato juice
  • 12 slices of bread
  • 2 or 3 halved and peeled avocados
  • 2 tomatoes
  • 1 or 2 butter lettuce
  • Half cup of hummus

Take a baking tray and put some baking paper in it. Put the carrot, zucchini, mince and the tomato juice in your kitchen bowl. Mix them with your hands. Meanwhile, roll 1 tablespoonful of all of these mixed ingredients and make tiny balls with the mixture. Place them on your baking tray. Start cooking on medium heat and check them after 5 minutes. Cut them and spread them on the bread, alongside with some avocado, lettuce and tomatoes. Wrap them up and there you go- you have just finished doing an easy recipe that is way too delicious to pass!

The second one on our list is the veggie and chicken platter. It is a simple fast lunch idea, and these are the ingredients you need:

  • Half cup of clear soy sauce
  • 1 or 2 tablespoons of raw honey
  • 12-13 chicken drumettes
  • 1 or 2 carrots
  • 2 celery pieces
  • 130 sugar snap peas

Start with preheating your oven (about 200C). Take a baking tray and put some baking foil on it. Start combining the tomato juice, soy sauce and the raw honey. After that, put the chicken in it and start stirring. Bake for about thirty minutes and after that, place it on the side so it can cool down. Put the peas in one of your kitchen bowls. Put some boiling water and let them stay like that for 3 to 4 minutes. Drain them and put some cold water. Then you can mix the chicken with the veggies and they are ready to be placed in your lunch box!

Yogurt and peach pastry

These are the ingredients you need for this delicious treat:

  • 200 grams of butter
  • 1 cup of sugar
  • 1 vanilla extract
  • 3 to 4 eggs
  • 230 grams of flour
  • 2 or 3 teaspoons of clear baking powder
  • 1 or 2 teaspoons of cinnamon
  • 250 ml of yoghurt (we prefer the Greek style one)
  • 2 peaches
  • Dusty icing sugar

Preheat your oven and take a slice pan. Put some baking paper on it. Take your electric beater and stat beating the sugar, vanilla and butter. After that, add the eggs, sift some of the baking powder, flour and the cinnamon. Add the yoghurt in your newly created egg mix and start stirring. Add the peach (leave some to put on top) and start baking for 30 minutes. In the end, after the pastry is baked, put some icing sugar on top.
