What you’ll need:

  • Shredded Chicken, 2 cups
  • Avocado
  • Garlic powder, 1/2 tsp
  • Salt, 1/2 tsp
  • Pepper, 1/2 tsp
  • Lime Juice, 2 tsp
  • Fresh cilantro, 1 tsp
  • Mayo, 1/4 cup
  • Greek Yogurt, 1/4 cup

Mix all of the ingredients into one bowl. Then cover the bowl and refrigerate it for around 30 minutes. This will allow all of the tasty flavors to blend in together into one. After those 30 minutes in the refrigerator, you can spread the mixture onto pita pockets, crackers, lettuce or bread.

2.Salad with Cilantro Dressing

Salads are the perfect meal for summer. If you love salads, cilantro and dressings, then here’s a recipe for you, super-easy and super-yummy.

What you’ll need:

  • Mayo, 3/4 cup
  • Greek Yogurt, 3/4 cup
  • Lime Juice, 2 tbs
  • Olve Oil, 1 tbs
  • Milk, 1/3 cup
  • Chopped Cilantro, 1/3 cup
  • Roughly chopped fresh chives, 2 tbs
  • Minced garlic, 2 r 3 cloves
  • Salt, 1/4 tsp
  • Black Pepper, 1/4 tsp

Put all of the ingredients into a food processor or a blender and let them blend together well until they get creamy and smooth. Leftovers from this mixture can be refrigerated into an air tight container for 2 weeks. And it is a great Cilantro Dressing for any type of salad which you prepare for your or your kids’ lunch box. You definitely should try to make it. You can separate the salad and the dressing by putting the dressing into a mini dipper. The perfect dessert after this salad can be fresh raspberries.
