Quorn Recipes for Your Lunch Box

Need some meat free quorn meals for your lunch box? The quorn recipes we are giving you today are really good and quick and easy to make. Take a look for yourself.

Pulled meat sandwich with meat free chicken fillets and barbecue sauce

You’ll need:

  • 4 fillets of the meat free fillets
  • Barbecue sauce
  • Coleslaw
  • Shredded white cabbage, 75g
  • Shredded red cabbage, 75g
  • Grated carrots, 75g
  • Chopped red onion, 50g
  • Low fat mayonnaise, 2tbsp (or yoghurt)
  • Mustard, ½ tsp
  • 4 bread buns

Shred the fillets and mix them with the sauce. Marinate them for around 30 minutes. Mix the coleslaw with the rest of the ingredients, season the mix and let it chill. Bake the fillets on a baking tray for around 15 minutes at 180 degrees. When they’re done, put first the coleslaw mix on the bread buns then the pulled quorn fillets and voila, your lunch box sandwich is ready.

Pate made of quorn meat free chicken, mushrooms and tarragon

For this pate, you’ll need:

  • Quorn meat free chicken, 200g
  • Butter, 30g
  • 2 diced shallots
  • 2 crushed garlics cloves
  • Diced mushrooms, 200g
  • Rehydrated and chopped porcini mushrooms, 6g
  • 1 crumbled in hot water stock cube
  • Low fat cheese, 100g
  • Chopped tarragon, 2tbsp
  • Salt and black pepper

In a pan for frying, heat the butter and the shallot for around 3 minutes, after that add the garlic and cook that for additional 1 to 2 minutes. Then add the mushrooms and cook another 5 minutes. After that, fry the quorn chicken, the stock cube, mushrooms and half of the tarragon. Pour this mixture into a food processor with half of the mushrooms mixture. Add the cream cheese and let the food processor do its job. Add also the tarragon and season it.  In the end, add the second half of the mushroom mixture and when it’s done put it in the freeze for one hour. You will have your pate ready for the next morning to put it on bread slices and take it in your lunch box.
