If you need to find some healthy and fast lunch box ideas for your kids’ lunch, you have stumbled upon the perfect article. We have made a short list of delicious lunch box ideas that will not take away a lot from your time.
The first one on our list is the pizza roll recipe. This is an interesting Italian recipe that is yummy yet healthy at the same time. You will need to use some bread dough, ¼ cup of already prepared pasta sauce, such as pesto, half cup of mozzarella, two to three tablespoons of pepperoni (but if you prefer, you can make vegetarian rolls and leave the pepperoni out of the game) and one or two tablespoons of extra virgin olive oil.
In the end, you can add a little bit of parmesan cheese. Start rolling the dough and spread the pasta (pesto) sauce on the dough, alongside the mozzarella. Add the chopped pepperoni and start rolling up the dough. Cut it into at least ten slices and put them on the baking paper. Brush it with the olive oil and sprinkle a little bit of parmesan on top. Start baking and wait for about 15 minutes before checking the oven. There you have it- a fast lunch box idea for your kids that they will definitely love!
The second lunch box recipe on our list is the yogurt bar recipe. You will need one to two cups of flour, one full teaspoon of clear baking soda and half teaspoon of clear baking powder, 1 or 2 teaspoons of cinnamon, half teaspoon of fresh ginger, one package of dried fruit (mixed or one type, depending of your preference), half cup of walnuts, one or one and a half cups of plain yogurt, half cup of apple or orange juice concentrate and two to three tablespoons of oil. Start mixing all of the ingredients and in the end, add the walnuts alongside the fruit. Combine the egg, the juice concentrate and the oil with the plain yogurt. Bake for at least 45 minutes after spreading the mixture in a cooking pan. After baking it, let the bars cool down before you start slicing them. If you want to, you can freeze them before serving.
The last one on our list is the so-called “secret” sandwich. You will need a muffin, mustard (or mayonnaise, depending on your kid’s preference), one or two slices of deli turkey, ham or chicken (depending what you kid likes the most) and one or two slices of gauda cheese. Carefully cut a small circle in the muffin. Add the mustard (or mayo), the meat and the cheese into the middle of the muffin. This is quite easy to do in the morning before going off to work and taking your kid to school and plus, it is a delicious treat for your kid, too.
