Fennel and Sausage Seed Slices
What you will need:
- One tablespoon of fennel seeds
- 375 grams of rolled pastry sheet
- 400 grams of pork sausage with removed skin
- One beaten egg
Squish the sausages together in a bowl and then make 2 balls out of them. Take one of the balls, place it on a cling film and roll it creating a cylinder. Take the cling film and wrap the cylinder and then put it on a plate or a tray and place it in the fridge. Now repeat the same thing with the other ball made out of sausage.
Heat the oven to 200 degrees. Cut 4 strips from the pastry and lay them on a flat surface. Take two strips and roll them more. Put the sausage meat in the middle of these pastries and then sprinkle fennel seeds. Cut slits on both sides of the meat, from the edge and create tabs. After that’s done, take the ends and fold them over. Starting with the end, take a tab and bring it over the meat part and keep repeating the same thing with both sides. Also repeat the same thing with the remaining strips and to prepare them for baking, brush them with the beaten egg.
You should bake them for 40 minutes or until they get a golden brown color. After the baking is done, slice them on a board.
Cakes Made from Potato with Cream Cheese and Smoked Salmon
What you will need:
- 100 grams of melted butter
- 1 teaspoon of soda bicarbonate
- 100 ml of double cream
- Bunch dill
- 200 grams of smoked salmon in slices
- 50 grams of halved caper berries
- One lemon
- 1 kg potatoes
- 280 grams of cream cheese
- 100 grams flour
Preheat the oven on 200 degrees. Bake the potatoes for around one and a half hours. They should be fluffy on the inside and crispy on the outside. Leave them to cool off and decrease the temperature of the oven on 180 degrees.
After the potatoes have been cooled off cut them in halves and with a spoon remove the flesh. Put the flesh in one bowl. Mash it and add the flour the soda and 2/3 of the melted butter and the season everything.
Use the remaining butter for brushing a tray for baking. Roll the potatoes in flour and then place them on the baking tray brush them with butter and bake them for 45 min.
During that time of baking, whisk the cream. Season with black pepper and add the double cream and the lemon juice. Use this mixture to spread it onto the potato cake and then cut it into squares. Place the salmon strips on the small cakes.
